Roskachestvo named a way to cook healthy pancakes during the Carnival period.
During Shrovetide week, the load on the body increases due to the high consumption of pancakes. On February 19, Maryam Davlekamova, head of the Competence Center for Functional Nutrition of Roskachestvo, told Izvestia how to avoid discomfort without giving up a traditional dish.
According to the expert, the key to healthier pancakes lies in replacing the basic ingredients. Instead of the usual premium wheat flour, which contains mostly fast carbohydrates and is devoid of healthy fiber, she recommends paying attention to functional analogues.
"If you want to make pancakes not only a festive, but also a balanced dish, try using functional amaranth flour. It has a high content of dietary fiber, which has a beneficial effect on digestion, and also gives pastries a pleasant nutty tint and does not contain gluten," the specialist explained.
An alternative is a ready-made pancake mix rich in dietary fiber and protein, which will allow you to maintain a feeling of fullness longer after a meal and will have a beneficial effect on digestion.
It is equally important, according to the Roskachestvo expert, to pay attention to the toppings that are traditionally served with pancakes.
"The classic options — condensed milk, jam with sugar or fatty sour cream — significantly increase the calorie content of the dish. A functional chocolate-nut paste will be an excellent and useful alternative to the usual additives. It will not only decorate the dessert, but also provide the body with healthy fats and protein," advised Davlekamova.
According to her, functional products contain an increased content of useful components in the composition, which makes it possible to compensate for the deficiency of substances necessary for the body within the daily calorie content.
A product that has been certified by an accredited certification body is considered functional. After that, the manufacturer has the right to label products with an approved functional product mark and place them on special shelves in retail chains. The certification confirms that the product does contain the declared amount of useful substances and a high concentration of benefits.
Vera Seryozhina, an expert at the LabQuest medical company, called pancakes dangerous for people with diabetes and stomach problems on February 18. The specialist warned that sweet fillings dramatically increase the glycemic index, which leads to spikes in blood glucose levels and a feeling of heaviness.
Nutritionist Elena Solomatina noted that adding fiber and replacing some of the white flour with alternative types make pancakes more useful. She clarified that it is better to bake diet pancakes rather than fry them, RT reports.
