Despite the prolonged heat treatment, a jelly left on the table for half a day can become a source of parasites and bacteria. On December 30, Rimma Moisenko, Candidate of Medical Sciences, dietitian, told Izvestia.
She stressed that the product becomes unsafe after only 12 hours of being kept warm. In this case, pathogens may begin to develop in the jelly, for example, Pseudomonas aeruginosa or staphylococcal infection.
"This is an ideal environment for fermentation and the appearance of pathogenic flora, which will be, at a minimum, a toxic substance for humans, and at a maximum, it can lead to serious diseases," concluded Moisenko.
In addition, jelly can be made from infected meat — heat treatment does not always affect the parasites, which may be in a "dormant" state and activated by heat.
The doctor called for careful selection of purchased meat and abandoning the habit of cooking for several days in advance.
Lawyer Ekaterina Nechaeva warned on December 29 about an administrative fine for cooking jelly with a strong odor in an apartment building. As she noted, if the smell from the apartment regularly interferes with neighbors, they can complain to Rospotrebnadzor or the district police officer.
