Restaurateur Bukharov urged stores to comply with the requirements for storing ready-made food

Retail chains that sell ready-made food in their halls must comply with the same technical regulations as catering companies. Igor Bukharov, President of the Federation of Restaurateurs and Hoteliers of Russia (FRiO), said this on Wednesday, November 19.

The restaurateur noted that outlets offering culinary products for sale are no different in their activities from restaurants and catering organizations. He recalled that sanitary rules apply equally to everyone, both for trade and for food enterprises.

"We have the international standard ISO 22000, we have the Russian standard. We have technical regulations on food safety. Everything is regulated by this. They can't be guided by anything else, and they want to do nothing. Then why should we do? And what is the difference between them, as they call it in quotation marks, "ready food", from culinary products and dishes that we prepare and supply? Nothing. This is a common phrase, we do not have such a term," Bukharov stressed in a conversation with Lenta.Ru .

Earlier, FRiO asked to eliminate inequalities in the rules of operation of public catering and retail chains selling ready-made food, according to the website. kp.ru . Bukharov sent a letter to the Chairman of the State Duma Vyacheslav Volodin. At the same time, the State Duma noted that the letter had not yet been received.

Bukharov expressed concern about the situation when retail chains are actively developing sales of "ready-made food," writes Moscow 24. However, such outlets are subject to less stringent requirements than catering establishments.

According to the authors of the appeal, these products are cheaper for customers not only due to the scale of the business, but also due to the lack of requirements for equipment, premises and processes, which creates unequal conditions for doing business.

In turn, Stanislav Bogdanov, chairman of the Presidium of the Association of Retail Companies, said in an interview with NSN that the introduction of uniform working conditions for catering and retail chains that sell ready meals would complicate the work of retailers, and deprive customers of high-quality fast food.
