- Russians were warned about the deterioration of the taste of tea during long-term storage in a thermos
Marina Moiseyak, Professor of the Department of Fermentation and Winemaking Technologies at ROSBIOTECH University, said on Thursday, September 11, that on average thermoses maintain temperatures from six to 12 hours due to the vacuum design, but tea will not be equally healthy and tasty all the time.
"The most stable option is black tea, which retains its taste for up to four hours. After this time, the tannins begin to break down, giving a bitter taste to the drink. In addition, prolonged temperature conditions reduce the antioxidant properties of tea. Vitamins are also destroyed," the expert said in an interview with Lenta.Ru .
According to the expert, green tea is less resistant to storage in a thermos. After three to four hours in a thermos, it loses its fresh flavor and richness, acquiring a brightly bitter taste.
"Mint or chamomile leaves, brewed in a thermos, can withstand up to six hours. Teas with fruit additives are stored worse, as fermentation processes can begin in the heat," said Moiseyak.
At the same time, if sugar is added to tea in a thermos, it accelerates the fermentation process and can contribute to microbiological contamination, while lemon juice, on the contrary, slows down spoilage a little.
The specialist also noted that the drink can be influenced by the material from which the thermos is made.
"The best way to preserve the taste is a glass thermos. The stainless steel vessel can give the tea a metallic taste. Plastic can release toxic substances when heated," she concluded.

On August 15, a gastroenterologist of the first category, nutritionist, and eating psychologist Nuria Dianova told whether tea with honey is really useful.
According to her, honey is a high—calorie and expensive product, essentially comparable to sugar, so you should not look for special benefits in it. If you add it to hot tea or pastries, it leaves only the aroma and taste, not the medicinal properties.
