Regular consumption of French fries is associated with an increased likelihood of developing type 2 diabetes, while boiled, baked potatoes and mashed potatoes do not have a similar effect. This was reported on August 11 by the Science Daily portal.

It was found that replacing potatoes with whole-grain products reduced the likelihood of developing diabetes, while eating white rice instead, on the contrary, increased the risks.

According to the researchers, potatoes contain useful substances, including fiber, vitamin C and magnesium, but their high starch content and high glycemic index are associated with an increased risk of diabetes. At the same time, previous studies did not take into account the cooking method and substitute products, which, according to scientists, is key to assessing the health effects.

According to the portal, the analysis was carried out on the basis of data from more than 205 thousand medical workers. All participants did not have diabetes, cardiovascular diseases, or cancer at the beginning of the follow-up. Every four years, they filled out dietary questionnaires. For a period of almost 40 years, 22,299 people were diagnosed with type 2 diabetes.

After adjusting for lifestyle and diet, scientists found that every three weekly servings of total potatoes increased the risk of diabetes by 5%, and the same amount of French fries by 20%. At the same time, baked, boiled vegetables or mashed potatoes did not show a significant increase in the indicator. Replacing three weekly servings of whole potatoes with whole grains reduced the risk by 8%, while replacing French fries with whole grains reduced the risk by 19%.

"Our results highlight that the association between potato consumption and the risk of type 2 diabetes depends on the specific foods used as a substitute. The results are also consistent with current dietary guidelines that promote the inclusion of whole grains in the diet for the prevention of type 2 diabetes," the study authors noted.

The portal noted that with a low impact on the environment and health, baked, boiled potatoes or mashed potatoes can be part of a healthy diet, but whole-grain products should remain a priority. They also called for further research involving more diverse populations and taking into account cooking methods.

According to him, you can not eat fruits for an average of two weeks. This period, according to the expert, depends on which fertilizer is used and for which plants.
