The Ministry of Industry and Trade of Russia is developing a standard for national cuisine, which will include more than 200 dishes, including fish soup, pancakes, chicken coop, beef tripe and viziga. This was reported in the department on September 6.

"As a first approximation, the list will include at least 250 items," the press service of the Ministry of Industry and Trade confirmed to RBC.

The ministry added that the development of the standard is important for the popularization of Russian dishes, since most restaurants in Russia now offer cuisines from other countries or a mixed menu. The Ministry of Industry and Trade noted that foreign influence in this area has led to the actual replacement of Russian cuisine over the past 30 years.

According to the Ministry of Industry and Trade, the working group is currently discussing the first stage of work on the creation of the standard, which will be presented on October 1, 2025. In addition, experts develop methodological recommendations that take into account the history and diversity of Russian cuisine and determine the correct names of dishes. The standards will be based on folk culinary classics.

It is specified that the recommendations will comply with international ISO certifications. In total, the standard of Russian cuisine will include about 200 types of dishes.
